The city of Kitchener boasts a unique Portuguese bakery in the heart of downtown. A Portuguesa Bakery, located near King St. W. and Water St., is a daily expression of community outreach and devotion to the neighbourhood in the form of fresh bread, Portuguese and European pastries.
This location, launched in August of 2025, offers a taste of Portugal featuring breakfast sandwiches, delectable lunches of porto-style bifana and piri-piri chicken, among others.
The bakery offers large wooden tables with comfortable seats, calm, quiet lighting and paintings of Portugal and other stunning areas. It is the perfect place for gathering with friends or a quiet place for computer work. Outdoor space offers an alternative for the warmer months.
Mario De Sousa, owner of A Portuguesa Bakery, speaks passionately about his love of baking and his desire to serve his community.
“I feel great running a bakery, and I love making everything so fresh!” De Sousa said.
The De Sousas run this and two other locations in New Hamburg and St. Jacobs.
Hailing from Sintra, Portugal, De Sousa fell in love with baking at the age of nine. He dwelled in his brother’s bakery and was an apprentice to the complex art of Portuguese baking, supporting this love and eagerness to bake throughout his life. The De Sousas traveled to and worked in many countries, including the United Kingdom and Germany. They worked for many years in Toronto, then came to KW for a quieter and more tightknit community.
“The baking process I use is important, and it makes the bread really fresh,” De Sousa said.
This is a practice used by artisan Portuguese bakers to make traditional breads easy to digest. The wheat dough rests for 24 hours or longer and allows the grains to ‘pre-digest’. This process evaporates some of the gluten, which makes the bread delicious and pure.
Baking begins at 1:30 a.m. each morning to ensure the crispness and wholesomeness of each piece of bread and pastry. Items are prepared and deliveries are made to the bakeries in St. Jacobs and New Hamburg. It is a labour of love, but De Sousa says he wouldn’t have it any other way.
“I love working in downtown Kitchener,” De Sousa said. He explained that it is a community-minded place where people care for each other.
“I want to learn how to bring everyone together,” De Sousa said.
His interest lies in baking and in gathering people together over good food.
Future ideas are clear; creating a space where families can come together in their bakery for celebrations or just quiet family time is important to the De Sousas. He spoke of having music nights or evenings where local folks would come and sing karaoke.
“We are here! We want to serve the community of KW. Always, everything is fresh every morning. We give our best all the time,” De Sousa said.
